The Difference Between a Cook and a Chef

The words 'cook' and 'chef' are often used interchangeably. Admittedly there is a fine line between the two, however I believe the difference is rooted in having a point of view when it comes to food. A cook follows recipes to make something delicious, a chef however follows his or her heart. A chef uses their own creativity and innovation when cooking. The difference to me between cook and chef is not whether you cook at home or in a five star restaurant, but rather what guides you and inspires you to create. To me, being creative is the ultimate joy; my creativity is rooted in my spirituality. I believe that to create something beautiful out of nothing is the closest you can get to understanding God.

Business Vs. Art

In my experience I've learned that many people go into the restaurant business because at the end of the day, it's business and there's money to be made. I've worked with owners and chefs who've discarded quality for quantity, or cut corners - sacrificing ingredients, all in the interest of an extra buck. Don't get me wrong, I want to be successful just as much as the next guy, but I don't believe that you have to sell your soul in the process. Food is a living thing that gives us life and pleasure, and it should be respected as such, not treated like some dead product for us to sell and consume.

Hunger and Passion

My passion is fueled by a hunger, a hunger to succeed but also to share my philosophy about food. So many things in this world divide us, such as politics and religion. Food unites us, it brings us together at one table to share and learn. It is this passion and philosophy that drives me everyday. It is what makes me want to open my restaurant, what makes me eager for people to taste my food. I hope that by sharing my philosophy with people, that people will come together, one meal at a time.
